#### Description:

#### Ingredients:

- 1 1/2 cups all-purpose flour

- 1/2 cup boiling water

- 1 jar (24 ounces) sour cherries, drained, juice reserved

- 1/2 cup Kirsch (cherry brandy) or cherry juice

- 3 cups heavy whipping cream

- 1/2 cup powdered sugar

- 2 teaspoons vanilla extract

- 1/4 cup cornstarch

- 1/4 cup water

- 1/2 cup chocolate shavings or curls

- Fresh cherries (optional, for garnish)


#### Instructions:


##### Making the Chocolate Sponge Cake:

1. **Preheat and Prep:** Preheat your oven to 350°F (175°C). Grease and line two 9-inch round baking pans with parchment paper.

2. **Combine Dry Ingredients:** In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.

3. **Cream Butter and Sugar:** In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.

4. **Combine:** Gradually add the dry ingredients to the creamed mixture alternately with the milk, beginning and ending with the dry ingredients. Stir in the boiling water until just combined.

5. **Bake:** Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Cool in pans for 10 minutes, then transfer to wire racks to cool completely.

1. **Prepare Cherry Filling:** In a small saucepan, combine the reserved cherry juice and Kirsch or cherry juice. Bring to a simmer over medium heat. In a small bowl, mix the cornstarch and water until smooth, then gradually stir into the cherry juice mixture. Cook, stirring constantly, until thickened and bubbly. Remove from heat and let cool completely.

2. **Whip Cream:** In a large bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.


##### Assembling the Cake:

1. **Slice Cake Layers:** Once the cakes are completely cooled, slice each cake in half horizontally to create four layers.

2. **Layering:** Place one cake layer on a serving plate. Brush with a bit of Kirsch (if using). Spread a layer of whipped cream over the cake and top with some of the cherry filling. Repeat with the remaining layers.

3. **Top and Sides:** Cover the top and sides of the cake with the remaining whipped cream.

4. **Decorate:** Sprinkle the chocolate shavings or curls over the top and sides of the cake. Garnish with fresh cherries, if desired.
